Test







 always like to take recipes of foods I love and making them healthier, now here is one of my favorite recipes but remember, everything in moderation.  The problem with this recipe is that I have no self control when I eat it but so don't follow my example. 

Ingredients:

1 tablespoon coconut oil 
1/2 cup frozen peas and carrots (thawed)
1 small yellow onion chopped
1 small green bell pepper chopped
1 tsp minced garlic
1/2 teaspoon freshly grated ginger
1 8 oz can of water chestnuts
3 green onions thinly sliced 
3 cups cooked brown rice
3 tbs low sodium soy sauce
2 egg whites 

In large non stick skillet heat the oil and add the onion, bell pepper, garlic and ginger, peas/carrots and stir fry until tender. Push the mixture to one side and add the eggs to other side and stir until scrambled. 

Now add the rice and soy sauce season mix well until thoroughly heated.  Please let me know how you like it ok.

The First Swap

Yesterday marked the beginning of a very exciting new venture.  I have heard about swap parties here and there and kept telling myself that I would have one one of these days.  Well, one of these days was yesterday and it absolutely exceeded all of my expectations.  Here is how I set up the table with a pop of color to please the eyes. 













I asked everyone to bring five accessories to swap but to my surprise everyone brought at least ten items......and they were all fantastic!

 

First came lunch...Chicken Enchiladas...yum.  They were delicious and they even got a recipe for those who wanted it.




 








Dessert came next....Pumpkin Cake prepared by my beautiful daughter Alex. 

  
Then came my favorite part....mingling.  We played People Bingo and got to know each other better.  They really got into it.   



 Then we were all ready to "shop" or rather "swap". 

 


Once everyone got their “new” items we were all smiles, everyone left with something they loved and took home the stuff no one else took.   

The party was a complete success and I cannot wait until the next one.
